    People should change their lifestyles in order to support our local farmers. There are several ways we can do that. One of them is buying and consuming fresh local groceries as much as possible. It includes local vegetables, fruits, bread, etc.

    The fruits and vegetables that we buy from a farmer market are the freshest and tastiest ever. They are allowed ripen fully in the field and sold directly to us.

    A lot of food found in supermarkets are highly processed and grown using pesticides and genetic modification. Many of them are irradiated or gassed in transit which may bring negative effects on human health. However, local groceries are minimally processed and our farmers grow nutritious products using sustainable farming techniques.

    Buying local groceries can also protect our environment. A few groceries are distributed by areas with large amount of fuel that contributes to pollution and creates garbage from the packaging. Local groceries don't need much transportation to get to the market, so they require less time and fuel to distribute.

    So, from now on we should consume fresh local groceries to support our local farmers because they contain less pesticides, are not genetically modified, and also help reduce pollution.

Cambodia and Thailand Reconnected by Rail After 45 years

    A railway reconnecting Cambodia and Thailand was officially inaugurated on Monday, April 22 in a bid to slash travel times and boost trade between the South-east Asian neighbors.

    Cambodian premier Hun Sen and his Thai counterpart Prayut Chan-O-Cha witnessed a signing ceremony at a Thai border post before riding together to the. Cambodian town of Poipet on a train donated by Thailand.

    The Asian Development Bank bankrolled the reconstruction of the link to the tune of US$ 13 million.

   Much of Cambodia's railways-built by the French in colonial times-were damaged by the years of bitter conflict that engulfed the country during the Cold War era.

    The 48 kilometers sectin of track near Poipet was destroyed in 1973 while the rest of the track to Phnom Penh had been suspended for over a decade due to its poor condition.

    Cambodia has more than 600 kilometers of track extending from its northern border with Thailand to the southern coast.

Chicken Nuggets

Ingredients:

• 4 chicken breasts, skinned
• 300 ml buttermilk
• 200 g breadcrumbs
• 1 tsp mustard powder
• A pinch of cayenne powder
• Salt and freshly ground black pepper
• 100 g plain (all-purpose) flour
• 2 eggs, beaten
• Vegetable oil
• Handful cherry. tomatoes, halved
• Handful rocket (arugula)
• 1 courgette (zucchini)

Methods:

1. Bash the chicken breasts between 2 pieces cling film with a rolling pin until about 2 cm thick.
2. Cut each piece into thick strips and place in a bowl with the buttermilk. Refrigerate for at least 2 hours or overnight.
3. Mix the breadcrumbs with the cayenne, mustard powder, and a little seasoning. 
4. Dip the cooled chicken pieces one at a time into the flour, then the eggs, and finally the breadcrumbs mix, then lay on a rack to dry slightly.
5. Heat 1 cm of oil in a pan and fry the chicken in batches until golden on both sides and cooked through.
6. Serve with the tomatoes and rocket, using a vegetable peeler to slice the courgette into ribbons.
