Chicken and Vegetables Brochettes

Ingredients:

• 4 chicken breast, skinned and cut into chunks
• 1 tsp dried oregano
• 4 tbsp olive oil
•  lemon, juiced
• salt and fresly black pepper
• 1 green pepper, deseeded and roughly chopped
• 1 red pepper, deceeded and roughly chopped
• 8-10 cherry tomatoes, halved

Steps:

1. Toss the chicken chunks with oregano, oil, a little lemon juice, and seasoning. Leave to marinate for 20 minutes.
2. Thread the chicken onto soaked wooden skewers, alternating with the peppers and tomatoes.
3. Grill or griddle until the chicken is golden and just cooked through; about 8-10 minutes.
4. Serve with lemon juice squeezed over and little more salt.
