Selendang Mayang

Selendang Mayang is a traditional beverage from Betawi.

Ingredients:

For Selendang Mayang:

• 750 ml water
• 25 gr rice flour
• 2 pandan leaves, knotted
•  tsp salt
• 125 gr sugar
•  tsp food coloring (red or pink)
• 100 gr sago flour

For coconut milk sauce:

• 750 ml coconut milk from 1 grated coconut
•  tsp salt
•  tsp sugar
• 3 pandan leaves, ripped

For palm sugar syrup:

• 300 gr palm sugar, finely sliced
•  tsp salt
• 300 ml water

Optional Ingredient:

• Ice cubes

Steps:

Selendang Mayang Dough

1. Mix 250 ml of water with sago palm flour, and rice flour. Set aside.
2. Boil the remaining water, pandan leaf, salt, and sugar until dissolved. Remove and strain.
3. Heat again the mixture of water and pandan leaves over low heat, add the sago palm flour mixture, stirring quickly until well blended, bring to a boil. Lift.
4. Pour the mixture into a mixing pan and smooth it out. Drizzle with the red food coloring, smooth with a brush until the entire surface is colored red. Let it cool down and harden slightly.

Coconut Milk Sauce

1. Boil all the ingredients of coconut milk sauce in the pan. Stir occasionally.
2. Remove the pan and let it cool.

Palm Sugar Syrup

1. Simmer all the ingredients of palm sugar syrup in the pan until they become thick.
2. Remove from the pan and let it cool.

Serving

1. Spoon thinly the Selendang Mayang dough, put in serving glasses or small bowls.
2. Pour coconut milk and palm sugar syrup. Add ice cubes and serve cold.
