Banana and Sesame Fritters

Ingredients:

• 30 g sesame seeds
• vegetable oil for deep-frying
• 200 g self-raising flour
• 2 tsp bicarbonate of soda (baking soda)
• 2 eggs
• ice-cold sparkling water
• 6 bananas
• vanilla ice-cream

Steps:

1. Toast the sesame seeds in a dry pan until lightly browned, then coarsely grind them with a pestle and mortar or a small food processor.
2. Put the oil in a deep pan to a depth of about 8 cm and bring it to a high heat
3. Beat the ground sesame seeds, flour, bicarbonate of soda, and eggs together with enough sparkling water to form a loose batter.
4. The oil is hot enough when bubbles appear on a wooden spoon dipped into the pan. Slice the bananas in half diagonally, dip in the batter and dip-fry in batches until golden brown.
5. Drain the banana fritters on kitchen paper and serve with the ice cream.
