Making Olive Oil Cake (Serves 4)
You're going to need:
1. 3 Large eggs
2. 150 grams granulated sugar
3. 1/2 cup extra-virgin olive all
4. 1/2 cup milk
5. 1/2 teaspoon vanilla extract
6. 1/4 teaspoon almond extract
7. 1 1/2 cups flour
8. 1 1/2 teaspoons baking powder
9. 1/2 teaspoon salt
Instruction:
1. Begin by by preheating your oven to 350 F
2. In a large bowl, add the sugar and the 3 eggs. Beat eggs and sugar at high speed for 30 seconds.
3. Add the oil in a slow, steady stream, beating until combined. Do not poor all at once.
4. Add milk, beating until combined.
5. Then, reduce mixer speed to low and beat in the vanilla and almound extracts.
6. In a medium bowl, whisk together flour, baking powder, and salt. Gradually add flour mixture to egg mixture, beating until combined, stopping to scrape sides of bowl.
7. Pour batter into your prepared pan.
8. Bake until a wooden pick inserted in centre comes our clean, 30 to 33 minutes.
9. Lt cool in pan for 5 minutes. Cut the edges of the cake to remove it from sticking to the pan. Remove from pan and let cool completely.
10. Brush with fresh olive oil just before serving. Store at room temperature wrapped loosely in foll or plastic wrap.
